Ingredients

- 1 cup dried red beans
- 1 cup long-grain white rice
- 1 onion, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 2 tbsp olive oil
- 1 tsp smoked paprika
- 1 tsp cumin
- 1 bay leaf
- 4 cups vegetable broth
- Salt and pepper to taste
Instructions
- Rinse the red beans and soak overnight.
- Drain beans and set aside.
- Heat olive oil in a pot over medium heat.
- Sauté onion, bell pepper, and garlic until soft.
- Add smoked paprika, cumin, and bay leaf.
- Stir in rice and drained beans.
- Pour in vegetable broth.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Remove bay leaf and season with salt and pepper.
- Serve hot.
Notes
- For extra flavor, add diced tomatoes.
- Replace vegetable broth with chicken broth if preferred.
- Store leftovers in an airtight container for up to 3 days.
