Ingredients

  • 1 cup dried red beans
  • 1 cup long-grain white rice
  • 1 onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp cumin
  • 1 bay leaf
  • 4 cups vegetable broth
  • Salt and pepper to taste

Instructions

  1. Rinse the red beans and soak overnight.
  2. Drain beans and set aside.
  3. Heat olive oil in a pot over medium heat.
  4. Sauté onion, bell pepper, and garlic until soft.
  5. Add smoked paprika, cumin, and bay leaf.
  6. Stir in rice and drained beans.
  7. Pour in vegetable broth.
  8. Bring to a boil, then reduce heat and simmer for 20 minutes.
  9. Remove bay leaf and season with salt and pepper.
  10. Serve hot.

Notes

  • For extra flavor, add diced tomatoes.
