  • 1 pound smoked sausage, sliced
  • 1 cup dried red beans, soaked overnight
  • 1 cup long-grain white rice
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons vegetable oil
  • 4 cups chicken broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon cayenne pepper
  • 1 bay leaf

Instructions

  1. Heat oil in a large pot over medium heat.
  2. Add sausage, onion, bell pepper, and garlic. Cook until vegetables soften.
  3. Drain soaked beans and add to the pot.
  4. Pour in chicken broth and add salt, black pepper, cayenne pepper, and bay leaf.
  5. Bring to a boil, then reduce heat and simmer for 1 hour or until beans are tender.
  6. Stir in rice, cover, and cook for 20 minutes or until rice is done.
  7. Remove bay leaf before serving.
