- 1 pound smoked sausage, sliced
- 1 cup dried red beans, soaked overnight
- 1 cup long-grain white rice
- 1 onion, chopped
- 1 bell pepper, chopped
- 2 cloves garlic, minced
- 2 tablespoons vegetable oil
- 4 cups chicken broth
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon cayenne pepper
- 1 bay leaf
Instructions
- Heat oil in a large pot over medium heat.
- Add sausage, onion, bell pepper, and garlic. Cook until vegetables soften.
- Drain soaked beans and add to the pot.
- Pour in chicken broth and add salt, black pepper, cayenne pepper, and bay leaf.
- Bring to a boil, then reduce heat and simmer for 1 hour or until beans are tender.
- Stir in rice, cover, and cook for 20 minutes or until rice is done.
- Remove bay leaf before serving.
Notes
- Soak beans overnight to reduce cooking time.
- Adjust cayenne pepper for desired spiciness.
- Store leftovers in an airtight container for up to 3 days.
