Ingredients

  • 2 boneless, skinless chicken breasts, cut into strips
  • 1 cup broccoli florets
  • 2 cups cooked rice
  • 1/4 cup orange juice
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 1 teaspoon minced garlic
  • 1 teaspoon grated ginger
  • 1/2 teaspoon red pepper flakes
  • 1 egg, beaten
  • 2 tablespoons vegetable oil
  • 1/4 cup cornstarch
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt

Instructions

  1. Coat chicken strips in cornstarch, salt, and black pepper.
  2. Heat 1 tablespoon of oil in a pan and cook chicken until crispy and golden. Set aside.
  3. In the same pan, add garlic, ginger, and red pepper flakes. Cook for 30 seconds.
  4. Add orange juice, soy sauce, and honey. Stir and simmer for 2 minutes until thickened.
  5. Return chicken to the pan and toss in the sauce.
  6. In a separate pan, heat remaining oil and scramble the egg. Add cooked rice and broccoli. Stir-fry for 3-4 minutes.
  7. Serve chicken over fried rice and broccoli.

Notes

  • Use day-old rice for better texture.
  • Adjust red pepper flakes for desired spiciness.
