- 2 boneless, skinless chicken breasts
- 1 tbsp olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 can (14 oz) diced tomatoes
- 1/2 cup heavy cream
- 1/4 cup fresh basil, chopped
- 1 tsp dried oregano
- Salt and pepper to taste
Instructions
- Heat olive oil in a large skillet over medium heat.
- Season chicken with salt and pepper, then cook until browned (5-6 minutes per side).
- Remove chicken and set aside.
- In the same skillet, sauté onion and garlic until softened (3-4 minutes).
- Add diced tomatoes, oregano, and simmer for 5 minutes.
- Stir in heavy cream and return chicken to the skillet.
- Cook for another 5-7 minutes until chicken is fully cooked.
- Garnish with fresh basil before serving.
Notes
- For a lighter version, use half-and-half instead of heavy cream.
- Add red pepper flakes for extra heat.
- Serve with pasta, rice, or crusty bread.
