Ingredients

  • 1 lb chicken thighs
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 tsp paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chicken thighs and brown on both sides.
  3. Remove chicken and set aside.
  4. Add onion, garlic, and bell pepper to the pot and sauté until soft.
  5. Stir in rice, paprika, salt, and pepper.
  6. Add chicken broth and bring to a boil.
  7. Return chicken to the pot and reduce heat to low.
  8. Cover and simmer for 20-25 minutes until rice is tender.
  9. Fluff rice with a fork and serve.

Notes

  • Use bone-in chicken for more flavor.
  • Adjust spices to your taste.
