A simple and flavorful one pot chicken and rice dish.
Ingredients

- 1 lb chicken thighs
- 1 cup long-grain rice
- 2 cups chicken broth
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 tsp paprika
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tbsp olive oil
Instructions
- Heat olive oil in a large pot over medium heat.
- Add chicken thighs and brown on both sides.
- Remove chicken and set aside.
- Add onion, garlic, and bell pepper to the pot and sauté until soft.
- Stir in rice, paprika, salt, and pepper.
- Add chicken broth and bring to a boil.
- Return chicken to the pot and reduce heat to low.
- Cover and simmer for 20-25 minutes until rice is tender.
- Fluff rice with a fork and serve.
Notes
- Use bone-in chicken for more flavor.
- Adjust spices to your taste.
- Let the dish sit covered for a few minutes before serving.
