Ingredients

  • 1 lb boneless, skinless chicken breasts, cubed
  • 1 tbsp Cajun seasoning
  • 2 tbsp olive oil
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 1/2 cups orzo pasta
  • 3 cups chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Season chicken with Cajun seasoning.
  2. Heat olive oil in a large pot over medium heat. Add chicken and cook until browned. Remove and set aside.
  3. In the same pot, sauté onion, garlic, and bell pepper until softened.
  4. Add orzo and stir for 1 minute.
  5. Pour in chicken broth and bring to a boil. Reduce heat and simmer for 10 minutes.
  6. Stir in heavy cream, Parmesan, and cooked chicken. Simmer for 5 more minutes.
  7. Season with salt and pepper. Garnish with parsley before serving.
