- 2 cups cooked jasmine rice
- 1 pound boneless, skinless chicken thighs, diced
- 2 tablespoons soy sauce
- 1 tablespoon sriracha sauce
- 1 tablespoon vegetable oil
- 3 cloves garlic, minced
- 1 cup mixed vegetables (carrots, peas, corn)
- 2 green onions, sliced
- Salt and pepper to taste
- 1 teaspoon sesame oil (optional)
Instructions
- Heat vegetable oil in a large skillet over medium-high heat.
- Add the diced chicken thighs and season with salt and pepper. Cook until browned and cooked through, about 5-7 minutes.
- Add minced garlic and cook for an additional 1 minute until fragrant.
- Stir in the mixed vegetables and cook until heated through.
- Add cooked jasmine rice, soy sauce, and sriracha sauce. Toss everything together until well combined.
- Drizzle with sesame oil if using, and stir in sliced green onions.
- Taste and adjust seasoning if needed. Serve hot.
