Ingredients

  • 1.5 lbs boneless, skinless chicken thighs
  • 1 can (13.5 oz) coconut milk
  • 2 limes (juiced and zested)
  • 2 cloves garlic (minced)
  • 1 tbsp fresh ginger (grated)
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp red pepper flakes (optional)
  • Fresh cilantro for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Season chicken with salt and black pepper, then add to the skillet. Cook for 5-6 minutes per side until golden brown.
  3. Remove chicken from the skillet and set aside.
  4. In the same skillet, add garlic and ginger. Cook for 1 minute until fragrant.
  5. Pour in coconut milk, lime juice, and lime zest. Stir well.
  6. Return chicken to the skillet and simmer for 10-12 minutes until fully cooked.
  7. Garnish with cilantro and serve with rice or vegetables.

Notes

  • For extra spice, add more red pepper flakes.
  • Chicken breasts can be used instead of thighs, but cooking time may vary.
