Ingredients

  • 1 lb boneless, skinless chicken breasts, sliced
  • 1 cup long-grain white rice
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 small onion, sliced
  • 2 cloves garlic, minced
  • 2 tbsp fajita seasoning
  • 2 tbsp olive oil
  • 2 cups chicken broth
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add chicken, season with salt and pepper, and cook until browned (about 5 minutes). Remove and set aside.
  3. In the same skillet, add onions, bell peppers, and garlic. Sauté for 3-4 minutes.
  4. Stir in rice and fajita seasoning, coating evenly.
  5. Pour in chicken broth and bring to a boil.
  6. Return chicken to the skillet, reduce heat to low, cover, and simmer for 15-20 minutes until rice is tender.
  7. Remove from heat, let sit for 5 minutes, then fluff rice with a fork.
  8. Garnish with fresh cilantro before serving.
