A simple and flavorful one-pan meal combining chicken, bell peppers, rice, and fajita seasoning for an easy dinner.
Ingredients

- 1 lb boneless, skinless chicken breasts, sliced
- 1 cup long-grain white rice
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 small onion, sliced
- 2 cloves garlic, minced
- 2 tbsp fajita seasoning
- 2 tbsp olive oil
- 2 cups chicken broth
- Salt and pepper to taste
- Fresh cilantro for garnish (optional)
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add chicken, season with salt and pepper, and cook until browned (about 5 minutes). Remove and set aside.
- In the same skillet, add onions, bell peppers, and garlic. Sauté for 3-4 minutes.
- Stir in rice and fajita seasoning, coating evenly.
- Pour in chicken broth and bring to a boil.
- Return chicken to the skillet, reduce heat to low, cover, and simmer for 15-20 minutes until rice is tender.
- Remove from heat, let sit for 5 minutes, then fluff rice with a fork.
- Garnish with fresh cilantro before serving.
Notes
- For extra flavor, add a squeeze of lime juice before serving.
- Substitute chicken with shrimp or tofu for variation.
- Store leftovers in an airtight container for up to 3 days.
