A quick and flavorful one-pan meal with Cajun-spiced shrimp and rice. Perfect for busy weeknights.
Ingredients

- 1 lb shrimp, peeled and deveined
- 1 cup long-grain white rice
- 2 cups chicken broth
- 1 bell pepper, diced
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tbsp Cajun seasoning
- 1 tbsp olive oil
- Salt and pepper to taste
- 1/4 cup chopped parsley for garnish
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add onion and bell pepper. Sauté until softened (3-4 minutes).
- Stir in garlic and Cajun seasoning. Cook for 30 seconds.
- Add rice and chicken broth. Bring to a boil.
- Reduce heat to low, cover, and simmer for 15 minutes.
- Place shrimp on top of rice, cover, and cook for 5 more minutes.
- Remove from heat. Let sit for 5 minutes before serving.
- Garnish with parsley.
Notes
- Adjust Cajun seasoning to taste.
- Use frozen shrimp if fresh isn’t available.
- For extra heat, add a pinch of cayenne pepper.
