Description

A quick and flavorful one-pan meal with Cajun-spiced shrimp and rice. Perfect for busy weeknights.


Ingredients

  • 1 lb shrimp, peeled and deveined
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 bell pepper, diced
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tbsp Cajun seasoning
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • 1/4 cup chopped parsley for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add onion and bell pepper. Sauté until softened (3-4 minutes).
  3. Stir in garlic and Cajun seasoning. Cook for 30 seconds.
  4. Add rice and chicken broth. Bring to a boil.
  5. Reduce heat to low, cover, and simmer for 15 minutes.
  6. Place shrimp on top of rice, cover, and cook for 5 more minutes.
  7. Remove from heat. Let sit for 5 minutes before serving.
  8. Garnish with parsley.

Notes

  • Adjust Cajun seasoning to taste.
  • Use frozen shrimp if fresh isn’t available.
  • For extra heat, add a pinch of cayenne pepper.
