- 2 tablespoons olive oil
- 1/4 cup balsamic vinegar
- 2 tablespoons honey
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- 1 cup cherry tomatoes, halved
- 1 cup baby spinach
Instructions
- Heat olive oil in a large skillet over medium heat.
- Season chicken breasts with salt, pepper, thyme, and rosemary.
- Add chicken to the skillet and cook for 5-6 minutes on each side until browned.
- In a small bowl, mix balsamic vinegar, honey, and minced garlic.
- Pour the balsamic mixture over the chicken in the skillet.
- Add cherry tomatoes and spinach to the skillet.
- Cover and cook for an additional 5-7 minutes until chicken is cooked through.
- Serve immediately.

- You can substitute chicken breasts with chicken thighs if preferred.
