Ingredients

- 1 lb beef stew meat, cubed
- 1 onion, diced
- 2 carrots, sliced
- 2 celery stalks, chopped
- 3 potatoes, diced
- 1 cup green beans, chopped
- 1 can (14.5 oz) diced tomatoes
- 6 cups beef broth
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried thyme
- 2 bay leaves
Instructions
- Heat a large pot over medium heat. Brown the beef cubes on all sides.
- Add the onion, carrots, and celery. Cook for 5 minutes until softened.
- Stir in the potatoes, green beans, diced tomatoes, and beef broth.
- Season with salt, pepper, thyme, and bay leaves.
- Bring to a boil, then reduce heat and simmer for 45 minutes or until beef is tender.
- Remove bay leaves before serving.
