Description
A hearty old fashioned beef stew with tender beef chunks, perfect for a comforting meal.
Ingredients

- 2 lbs beef chuck, cut into 1-inch cubes
- 2 tbsp olive oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 4 carrots, sliced
- 3 potatoes, diced
- 4 cups beef broth
- 1 cup red wine (optional)
- 2 tbsp tomato paste
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1 bay leaf
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium-high heat.
- Brown the beef cubes in batches, then set aside.
- Add onion and garlic to the pot, sauté until softened.
- Return beef to the pot, add carrots, potatoes, beef broth, red wine, tomato paste, thyme, rosemary, and bay leaf.
- Bring to a boil, then reduce heat and simmer for 2 hours or until beef is tender.
- Season with salt and pepper before serving.
Notes
- For a thicker stew, mix 1 tbsp flour with 2 tbsp water and stir into the stew during the last 10 minutes of cooking.
- Leftovers can be stored in the fridge for up to 3 days.
