- 1 medium head of cauliflower, cut into florets
- 1 cup shredded cheddar cheese
- 1/2 cup grated Parmesan cheese
- 2 large eggs
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 1/4 cup chopped fresh parsley (optional)
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a food processor, add the cauliflower florets and pulse until they resemble rice or couscous.
- Transfer the cauliflower rice to a clean kitchen towel and squeeze out as much moisture as possible.
- In a large bowl, combine the drained cauliflower rice, cheddar cheese, Parmesan cheese, eggs, garlic powder, onion powder, salt, and pepper. Mix until well combined.
- Scoop out tablespoon-sized portions of the mixture and form them into small bites or patties.
- Place the bites on the prepared baking sheet, leaving space between each one.
- Bake for 20-25 minutes, or until the bites are golden brown and crispy.
- Remove from the oven and let cool slightly before serving. Garnish with chopped parsley if desired.
