  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 2 large eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1/4 cup chopped fresh parsley (optional)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a food processor, add the cauliflower florets and pulse until they resemble rice or couscous.
  3. Transfer the cauliflower rice to a clean kitchen towel and squeeze out as much moisture as possible.
  4. In a large bowl, combine the drained cauliflower rice, cheddar cheese, Parmesan cheese, eggs, garlic powder, onion powder, salt, and pepper. Mix until well combined.
  5. Scoop out tablespoon-sized portions of the mixture and form them into small bites or patties.
