- 1 1/2 cups Graham cracker crumbs
- 1/4 cup Granulated sugar
- 1/2 cup Unsalted butter, melted
- 16 oz Cream cheese, softened
- 1/2 cup Powdered sugar
- 1 tsp Vanilla extract
- 1 cup Heavy cream
- As desired Fresh fruit or chocolate for topping
Instructions
- In a medium bowl, mix the graham cracker crumbs, granulated sugar, and melted butter until well combined.
- Press the mixture evenly into the bottom of mini cheesecake cups or a muffin tin lined with paper liners.
- In a large mixing bowl, beat the softened cream cheese until smooth.
- Add the powdered sugar and vanilla extract, and mix until well combined.
- In a separate bowl, whip the heavy cream until stiff peaks form.
- Gently fold the whipped cream into the cream cheese mixture until fully combined.
- Spoon the cheesecake filling over the crusts in the mini cups, smoothing the tops.
- Chill in the refrigerator for at least 4 hours or until set.
- Before serving, top with fresh fruit or chocolate as desired.
Notes
- For a flavored cheesecake, consider adding lemon juice or cocoa powder to the filling.
- These mini cheesecakes can be made a day in advance for convenience.
