- 1/2 cup powdered sugar
- 1/4 cup Greek yogurt
- 1/4 cup freshly squeezed lemon juice
- 1 teaspoon lemon zest
- 1 teaspoon culinary lavender buds, plus extra for garnish
- 1 teaspoon vanilla extract
- 1/2 cup graham cracker crumbs
- 1/4 cup unsalted butter, melted
Instructions
- In a medium bowl, beat the softened cream cheese until smooth and creamy.
- Add the powdered sugar, Greek yogurt, lemon juice, lemon zest, lavender buds, and vanilla extract. Mix until well combined and smooth.
- In another bowl, combine the graham cracker crumbs and melted butter, mixing until the crumbs are evenly coated.
- Line a mini muffin pan with paper liners. Press about 1 tablespoon of the graham cracker mixture into the bottom of each muffin cup.
- Spoon the cheesecake mixture on top of the graham cracker crust, filling each cup to the top.
- Refrigerate for at least 4 hours or until set.
- Once set, remove the cheesecake bites from the muffin pan and garnish with additional lavender buds before serving.
