Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 cup mushrooms, finely chopped
  • 1/4 cup breadcrumbs
  • 2 tbsp olive oil
  • 1 clove garlic, minced
  • 1/4 cup shredded mozzarella cheese
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a pan, heat 1 tbsp olive oil and sauté mushrooms and garlic until soft.
  3. Mix mushrooms with breadcrumbs, cheese, salt, and pepper.
  4. Cut a pocket into each chicken breast and stuff with the mushroom mixture.
  5. Heat remaining olive oil in a pan and sear chicken for 2-3 minutes per side.
  6. Transfer to a baking dish and bake for 20 minutes or until fully cooked.

Notes

  • Use a sharp knife to cut the chicken pockets carefully.
  • Check doneness with a meat thermometer (165°F).
  • Serve with a side of roasted vegetables or salad.
