Ingredients

  • 4 chicken thighs
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp paprika
  • 1/2 tsp turmeric
  • 1/2 tsp cinnamon
  • 1 tbsp olive oil
  • 1 cup chicken broth
  • 1 lemon, sliced
  • 1/2 cup olives
  • Fresh cilantro for garnish
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a tagine or deep skillet over medium heat.
  2. Add onions and garlic, sauté until soft.
  3. Add chicken thighs and brown on both sides.
  4. Stir in cumin, coriander, paprika, turmeric, and cinnamon.
  5. Pour in chicken broth and bring to a simmer.
  6. Add lemon slices and olives.
  7. Cover and cook for 30 minutes until chicken is tender.
  8. Garnish with fresh cilantro before serving.
