Ingredients

- 4 chicken thighs
- 2 tbsp olive oil
- 1 onion, chopped
- 3 garlic cloves, minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp paprika
- 1/2 tsp turmeric
- 1/2 tsp cinnamon
- 1 cup chicken broth
- 1/2 cup dried apricots, chopped
- 1/4 cup green olives, pitted
- Salt and pepper to taste
- Fresh cilantro, chopped, for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Season chicken thighs with salt and pepper, then brown them in the pot for 3-4 minutes per side. Remove and set aside.
- Add onion to the pot and sauté until soft, about 5 minutes.
- Stir in garlic, cumin, coriander, paprika, turmeric, and cinnamon. Cook for 1 minute.
- Pour in chicken broth and scrape up any browned bits from the pot.
- Return chicken to the pot. Add apricots and olives.
- Cover and simmer for 25-30 minutes, until chicken is cooked through.
- Garnish with fresh cilantro before serving.
Notes
- Use bone-in chicken for more flavor.
- Adjust spices to your preference.
- Serve with couscous or rice.
