Ingredients

  • 4 chicken thighs
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp paprika
  • 1/2 tsp turmeric
  • 1/2 tsp cinnamon
  • 1 cup chicken broth
  • 1/2 cup dried apricots, chopped
  • 1/4 cup green olives, pitted
  • Salt and pepper to taste
  • Fresh cilantro, chopped, for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Season chicken thighs with salt and pepper, then brown them in the pot for 3-4 minutes per side. Remove and set aside.
  3. Add onion to the pot and sauté until soft, about 5 minutes.
  4. Stir in garlic, cumin, coriander, paprika, turmeric, and cinnamon. Cook for 1 minute.
  5. Pour in chicken broth and scrape up any browned bits from the pot.
  6. Return chicken to the pot. Add apricots and olives.
  7. Cover and simmer for 25-30 minutes, until chicken is cooked through.
  8. Garnish with fresh cilantro before serving.

Notes

  • Use bone-in chicken for more flavor.
  • Adjust spices to your preference.
