Ingredients

  • 1/2 cup granulated sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground cloves
  • 1/4 tsp salt
  • 1/2 cup pumpkin puree
  • 1/4 cup vegetable oil
  • 1 large egg
  • 1/4 cup milk
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Grease a mini muffin tin.
  2. In a bowl, mix flour, sugar, baking powder, baking soda, cinnamon, nutmeg, cloves, and salt.
  3. In another bowl, whisk pumpkin puree, oil, egg, milk, and vanilla.
  4. Combine wet and dry ingredients, stirring just until mixed.
  5. Spoon batter into muffin tin, filling each cup 2/3 full.
  6. Bake for 12-15 minutes or until a toothpick comes out clean.
  7. Cool in the pan for 5 minutes, then transfer to a wire rack.
