Ingredients

  • 1 1/2 cups granulated sugar
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup unsalted butter, softened
  • 3 large eggs
  • 1 cup blackberry puree
  • 1/2 cup buttermilk
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9-inch cake pan.
  2. In a bowl, whisk flour, sugar, baking soda, and salt.
  3. Beat butter until creamy. Add eggs one at a time, mixing well.
  4. Alternate adding flour mixture and buttermilk, starting and ending with flour.
  5. Fold in blackberry puree and vanilla extract.
  6. Pour batter into the pan and bake for 35-40 minutes, or until a toothpick comes out clean.
  7. Let cool before serving.
