A fresh and flavorful salad inspired by Mexican street corn. Combines grilled corn with creamy dressing, cheese, and spices for a delicious side dish.
Ingredients

- 4 ears of corn, husked
- 1/4 cup mayonnaise
- 1/4 cup sour cream
- 1/2 cup crumbled cotija cheese
- 1/2 teaspoon chili powder
- 1/4 teaspoon smoked paprika
- 1 lime, juiced
- 2 tablespoons chopped cilantro
- 1 small red onion, finely diced
- 1 jalapeño, seeded and minced
- Salt to taste
Instructions
- Preheat grill to medium-high heat.
- Grill corn for 10 minutes, turning occasionally, until lightly charred.
- Let corn cool slightly, then cut kernels off the cob.
- In a large bowl, mix mayonnaise, sour cream, lime juice, chili powder, and smoked paprika.
- Add corn, cotija cheese, red onion, jalapeño, and cilantro to the bowl.
- Toss until well combined.
- Season with salt to taste.
- Serve chilled or at room temperature.
Notes
- For extra flavor, add a pinch of cayenne pepper.
- Substitute feta cheese if cotija is unavailable.
- Best served fresh but can be refrigerated for up to 2 days.
