Ingredients

  • 8 oz pasta (penne or fusilli)
  • 2 cups corn kernels (fresh or frozen)
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1/2 cup crumbled cotija cheese
  • 1/4 cup chopped cilantro
  • 1 tsp chili powder
  • 1 lime (juiced)
  • 1 clove garlic (minced)
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Cook pasta according to package instructions. Drain and rinse with cold water.
  2. Heat a pan over medium heat. Add corn and cook for 3-4 minutes until slightly charred.
  3. In a large bowl, mix mayonnaise, sour cream, lime juice, garlic, chili powder, salt, and pepper.
  4. Add pasta, corn, cotija cheese, and cilantro to the bowl. Toss well.
