  • 2 lbs boneless, skinless chicken breasts or thighs
  • 1 tbsp olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 tbsp chili powder
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1 tsp oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup chicken broth
  • 1 lime, juiced
  • 2 tbsp chopped cilantro

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add onion and cook until soft.
  2. Add garlic and cook for 1 minute until fragrant.
  3. Stir in chili powder, cumin, paprika, oregano, salt, and pepper.
  4. Add chicken and broth. Bring to a simmer, cover, and cook for 20-25 minutes until chicken is tender.
  5. Remove chicken, shred it with two forks, and return to the skillet.
  6. Cook uncovered for 5-10 minutes until the liquid reduces.
  7. Stir in lime juice and cilantro before serving.
