- 2 lbs boneless, skinless chicken breasts or thighs
- 1 tbsp olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 tbsp chili powder
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1 tsp oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 cup chicken broth
- 1 lime, juiced
- 2 tbsp chopped cilantro
Instructions
- Heat olive oil in a large skillet over medium heat. Add onion and cook until soft.
- Add garlic and cook for 1 minute until fragrant.
- Stir in chili powder, cumin, paprika, oregano, salt, and pepper.
- Add chicken and broth. Bring to a simmer, cover, and cook for 20-25 minutes until chicken is tender.
- Remove chicken, shred it with two forks, and return to the skillet.
- Cook uncovered for 5-10 minutes until the liquid reduces.
- Stir in lime juice and cilantro before serving.
