- 2 ripe avocados, mashed
- 1 medium onion, finely chopped
- 1 tomato, diced
- 1 lime, juiced
- Salt to taste
- 1 cup salsa
- 8 flour tortillas
- 2 cups shredded cheese (cheddar or Mexican blend)
- 1 cup cooked and shredded chicken (optional)
- 1 cup sour cream
- Fresh cilantro for garnish
Instructions
- In a bowl, combine mashed avocados, chopped onion, diced tomato, lime juice, and salt to make guacamole. Mix well and set aside.
- Heat a skillet over medium heat. Place one tortilla in the skillet and sprinkle cheese on half of the tortilla. Add some shredded chicken if using, then fold the tortilla over. Cook until golden brown, about 2-3 minutes per side. Repeat with remaining tortillas.
- Arrange the quesadillas on a large serving platter, cut into wedges.
- Serve the guacamole and salsa in small bowls alongside the quesadilla wedges.
- Add a dollop of sour cream and garnish with fresh cilantro.
