- 2 boneless, skinless chicken breasts
- 1 cup shredded cheddar cheese
- 1/2 cup milk
- 1 tbsp butter
- 1 tbsp flour
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 tsp cumin
- 1/2 tsp chili powder
- 1/4 cup diced tomatoes
- 2 tbsp chopped cilantro
Instructions
- Season chicken breasts with salt, pepper, cumin, and chili powder.
- Cook chicken in a skillet over medium heat until fully cooked (about 6-7 minutes per side).
- Remove chicken and set aside.
- In the same skillet, melt butter and whisk in flour to make a roux.
- Gradually add milk, stirring constantly until thickened.
- Add shredded cheese and stir until melted and smooth.
- Pour cheese sauce over cooked chicken.
- Top with diced tomatoes and chopped cilantro before serving.
Notes
- For extra spice, add diced jalapeños to the cheese sauce.
- Serve with rice or warm tortillas.
- Leftovers can be refrigerated for up to 2 days.
