Ingredients

  • 1 lb ground beef
  • 1 onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 packet taco seasoning
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 6 corn tortillas, cut into strips
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. Preheat oven to 375°F.
  2. Cook ground beef, onion, and bell pepper in a skillet until beef is browned.
  3. Add garlic, black beans, corn, diced tomatoes, and taco seasoning. Simmer for 5 minutes.
  4. Spread a layer of tortilla strips in a greased baking dish.
  5. Add half of the beef mixture, then half of the sour cream and cheeses. Repeat layers.
  6. Bake for 20-25 minutes until bubbly and golden.
  7. Garnish with cilantro before serving.

Notes

  • For extra spice, add jalapeños or hot sauce.
  • Substitute ground turkey or chicken for a lighter option.
