- 1 lb ground beef
- 1 onion, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (10 oz) diced tomatoes with green chilies
- 1 packet taco seasoning
- 1 cup sour cream
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 6 corn tortillas, cut into strips
- 1/4 cup fresh cilantro, chopped
Instructions
- Preheat oven to 375°F.
- Cook ground beef, onion, and bell pepper in a skillet until beef is browned.
- Add garlic, black beans, corn, diced tomatoes, and taco seasoning. Simmer for 5 minutes.
- Spread a layer of tortilla strips in a greased baking dish.
- Add half of the beef mixture, then half of the sour cream and cheeses. Repeat layers.
- Bake for 20-25 minutes until bubbly and golden.
- Garnish with cilantro before serving.
Notes
- For extra spice, add jalapeños or hot sauce.
- Substitute ground turkey or chicken for a lighter option.
- Leftovers can be refrigerated for up to 3 days.
