Description

Ingredients

  • 3 tbsp olive oil
  • 2 lemons (juiced and zested)
  • 3 garlic cloves (minced)
  • 2 tbsp fresh rosemary (chopped)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried oregano

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a bowl, mix olive oil, lemon juice, lemon zest, garlic, rosemary, salt, pepper, and oregano.
  3. Coat the lamb ribs evenly with the marinade.
  4. Place ribs on a baking tray and roast for 45 minutes.
  5. Increase oven temperature to 425°F (220°C) and roast for another 15 minutes until golden.
  6. Rest for 5 minutes before serving.
