Ingredients

- 2 lbs lamb ribs
- 3 tbsp olive oil
- 2 lemons (juiced and zested)
- 3 garlic cloves (minced)
- 2 tbsp fresh rosemary (chopped)
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried oregano
Instructions
- Preheat oven to 375°F (190°C).
- In a bowl, mix olive oil, lemon juice, lemon zest, garlic, rosemary, salt, pepper, and oregano.
- Coat the lamb ribs evenly with the marinade.
- Place ribs on a baking tray and roast for 45 minutes.
- Increase oven temperature to 425°F (220°C) and roast for another 15 minutes until golden.
- Rest for 5 minutes before serving.
Notes
- Marinate for at least 2 hours for deeper flavor.
- Check internal temperature for doneness (145°F for medium).
- Pair with roasted vegetables or a fresh salad.
