Ingredients

- 1/4 cup olive oil
- 3 lemons (juiced and zested)
- 4 cloves garlic (minced)
- 1 tsp dried oregano
- 1 tsp dried thyme
- Salt and pepper to taste
- 1 lb mixed vegetables (bell peppers, zucchini, eggplant)
- 2 cups cooked rice pilaf
Instructions
- Preheat oven to 400°F.
- Mix olive oil, lemon juice, lemon zest, garlic, oregano, thyme, salt, and pepper.
- Coat chicken breasts in the marinade and let sit for 15 minutes.
- Toss vegetables with remaining marinade.
- Place chicken and vegetables on a baking sheet.
- Roast for 25 minutes or until chicken reaches 165°F.
- Serve with rice pilaf.
