- 2 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1 lemon, juiced and zested
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/4 cup red onion, thinly sliced
- 1/4 cup kalamata olives
- 1/4 cup feta cheese, crumbled
- 1 cup cooked quinoa or brown rice
Instructions
- Preheat oven to 375°F (190°C).
- In a bowl, mix olive oil, lemon juice, lemon zest, garlic, oregano, salt, and pepper.
- Place chicken breasts in a baking dish and pour the marinade over them.
- Bake for 25-30 minutes or until chicken reaches an internal temperature of 165°F (74°C).
- While chicken cooks, prepare quinoa or brown rice according to package instructions.
- Chop vegetables and combine with olives and feta cheese.
- Slice cooked chicken and divide into meal prep containers with quinoa and vegetable mix.
- Store in the refrigerator for up to 4 days.

- For extra flavor, marinate chicken for 30 minutes before baking.
- Substitute quinoa with couscous or whole wheat pasta if preferred.
