Ingredients

- 2 boneless, skinless chicken breasts
- 2 tbsp olive oil
- 1 lemon (juiced and zested)
- 2 cloves garlic (minced)
- 1 tsp dried oregano
- 1 tsp dried thyme
- Salt and pepper to taste
- 1 cup couscous
- 1 ¼ cups chicken broth
- 2 tbsp fresh parsley (chopped)
- 1 tbsp fresh mint (chopped)
Instructions
- In a bowl, mix chicken with olive oil, lemon juice, lemon zest, garlic, oregano, thyme, salt, and pepper. Marinate for 15 minutes.
- Heat a pan over medium heat. Cook chicken for 6-7 minutes per side until fully cooked. Set aside.
- In a pot, bring chicken broth to a boil. Stir in couscous, cover, and remove from heat. Let sit for 5 minutes.
- Fluff couscous with a fork and mix in parsley and mint.
- Slice chicken and serve over herbed couscous.
Notes
- For extra flavor, add chopped olives or feta cheese to the couscous.
- Substitute quinoa for couscous for a gluten-free option.
- Adjust lemon and herbs to taste.
