- 4 boneless, skinless chicken breasts
- Juice of 2 lemons
- 3 cloves garlic, minced
- 2 tbsp olive oil
- 1 tsp dried oregano
- 1 tsp salt
- 1/2 tsp black pepper
- 1 cup long-grain white rice
- 2 cups chicken broth
- 2 tbsp butter
- 2 cloves garlic, minced (for rice)
- 1 tbsp fresh parsley, chopped
Instructions
- Marinate chicken with lemon juice, minced garlic, olive oil, oregano, salt, and pepper for at least 30 minutes.
- Heat a pan over medium-high heat. Cook chicken for 5-7 minutes per side until golden and cooked through. Set aside.
- In the same pan, melt butter and sauté garlic until fragrant.
- Add rice and stir for 1-2 minutes.
- Pour in chicken broth, bring to a boil, then reduce heat to low. Cover and simmer for 15-20 minutes until rice is tender.
- Fluff rice with a fork and stir in chopped parsley.
- Serve chicken over garlic rice.
Notes
- For extra flavor, add a pinch of red pepper flakes to the marinade.
- Substitute chicken broth with water if needed, but broth enhances taste.
- Let the chicken rest for 5 minutes before slicing to retain juices.
