Ingredients

  • 4 boneless, skinless chicken breasts
  • Juice of 2 lemons
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 2 tbsp butter
  • 2 cloves garlic, minced (for rice)
  • 1 tbsp fresh parsley, chopped

Instructions

  1. Marinate chicken with lemon juice, minced garlic, olive oil, oregano, salt, and pepper for at least 30 minutes.
  2. Heat a pan over medium-high heat. Cook chicken for 5-7 minutes per side until golden and cooked through. Set aside.
  3. In the same pan, melt butter and sauté garlic until fragrant.
  4. Add rice and stir for 1-2 minutes.
  5. Pour in chicken broth, bring to a boil, then reduce heat to low. Cover and simmer for 15-20 minutes until rice is tender.
  6. Fluff rice with a fork and stir in chopped parsley.
  7. Serve chicken over garlic rice.

Notes

  • For extra flavor, add a pinch of red pepper flakes to the marinade.
  • Substitute chicken broth with water if needed, but broth enhances taste.
  • Let the chicken rest for 5 minutes before slicing to retain juices.
