Ingredients

- 4 boneless, skinless chicken breasts
- 2 lemons, juiced and zested
- 3 cloves garlic, minced
- 2 tbsp olive oil
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- 4 large potatoes, peeled and cubed
- 1/2 cup milk
- 2 tbsp butter
- 1/4 cup sour cream
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- In a bowl, mix lemon juice, lemon zest, garlic, olive oil, oregano, salt, and pepper.
- Coat chicken breasts with the marinade and let sit for 15 minutes.
- Place chicken in a baking dish and bake for 25-30 minutes until fully cooked.
- Boil potatoes in salted water until tender, about 15 minutes.
- Drain potatoes and mash with milk, butter, sour cream, salt, and pepper.
- Serve chicken with mashed potatoes.
Notes
- For extra flavor, add a pinch of red pepper flakes to the marinade.
- Use fresh lemons for the best taste.
- Adjust milk quantity for desired mashed potato consistency.
