- 2 boneless, skinless chicken
- 1/4 cup olive oil
- 2 tbsp lemon juice
- 2 cloves garlic, minced
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup cooked quinoa or rice
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/4 cup red onion, thinly sliced
- 1/4 cup feta cheese, crumbled
- 2 tbsp fresh parsley, chopped
Instructions
- In a bowl, mix olive oil, lemon juice, garlic, oregano, salt, and pepper.
- Add chicken to the marinade, coating well. Let sit for 15 minutes.
- Heat a skillet over medium heat. Cook chicken for 6-7 minutes per side until fully cooked.
- Slice chicken into strips.
- Divide cooked quinoa or rice between bowls.
- Top with sliced chicken, cherry tomatoes, cucumber, red onion, and feta cheese.
- Sprinkle with fresh parsley.

- Marinate chicken longer for more flavor.
- Substitute quinoa with couscous or brown rice.
