Ingredients

  • 1/4 cup olive oil
  • 2 tbsp lemon juice
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup cooked quinoa or rice
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup feta cheese, crumbled
  • 2 tbsp fresh parsley, chopped

Instructions

  1. In a bowl, mix olive oil, lemon juice, garlic, oregano, salt, and pepper.
  2. Add chicken to the marinade, coating well. Let sit for 15 minutes.
  3. Heat a skillet over medium heat. Cook chicken for 6-7 minutes per side until fully cooked.
  4. Slice chicken into strips.
  5. Divide cooked quinoa or rice between bowls.
  6. Top with sliced chicken, cherry tomatoes, cucumber, red onion, and feta cheese.
  7. Sprinkle with fresh parsley.
