A rich and creamy Mediterranean-inspired chicken orzo dish with tender chicken, orzo pasta, and a blend of herbs and spices.

- 2 boneless, skinless chicken breasts (about 1 lb)
- 1 cup orzo pasta
- 2 tbsp olive oil
- 1 small onion, diced
- 3 garlic cloves, minced
- 1 tsp dried oregano
- 1 tsp dried basil
- 1/2 tsp paprika
- 1/4 tsp red pepper flakes
- 1 cup cherry tomatoes, halved
- 2 cups chicken broth
- 1/2 cup heavy cream
- 1/2 cup crumbled feta cheese
- Salt and black pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large skillet over medium heat. Add diced onion and sauté until soft, about 3 minutes.
- Add minced garlic, oregano, basil, paprika, and red pepper flakes. Cook for 1 minute until fragrant.
- Add chicken breasts and cook until browned on both sides, about 5 minutes per side. Remove and set aside.
- In the same skillet, add orzo and cook for 1 minute, stirring constantly.
- Pour in chicken broth and bring to a simmer. Return chicken to the skillet.
- Cover and cook for 10-12 minutes, until orzo is tender and chicken is cooked through.
- Stir in heavy cream and cherry tomatoes. Simmer for 2 more minutes.
- Sprinkle with feta cheese and garnish with fresh parsley before serving.
Notes
- For a lighter version, substitute half-and-half for heavy cream.
- Add spinach or olives for extra Mediterranean flavor.
- Store leftovers in an airtight container for up to 3 days.
