Ingredients

- 2 cups cooked chickpeas
- 1 lb cooked chicken breast, diced
- 1 cucumber, diced
- 1 red bell pepper, diced
- 1/2 red onion, thinly sliced
- 1/2 cup Kalamata olives, pitted and halved
- 1/4 cup feta cheese, crumbled
- 2 tbsp olive oil
- 1 tbsp lemon juice
- 1 tsp dried oregano
- Salt and black pepper to taste
Instructions
- In a large bowl, combine chickpeas, chicken, cucumber, bell pepper, red onion, and olives.
- In a small bowl, whisk together olive oil, lemon juice, oregano, salt, and black pepper.
- Pour the dressing over the salad and toss gently to coat.
- Sprinkle with feta cheese before serving.
Notes
- For best flavor, let the salad sit for 10 minutes before serving.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- Substitute feta with goat cheese if preferred.
