Description

A refreshing and protein-packed Mediterranean-inspired salad with chickpeas, chicken, and fresh vegetables.


Ingredients

  • 2 cups cooked chickpeas
  • 1 lb cooked chicken breast, diced
  • 1 cucumber, diced
  • 1 red bell pepper, diced
  • 1/2 red onion, thinly sliced
  • 1/2 cup Kalamata olives, pitted and halved
  • 1/4 cup feta cheese, crumbled
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp dried oregano
  • Salt and black pepper to taste

Instructions

  1. In a large bowl, combine chickpeas, chicken, cucumber, bell pepper, red onion, and olives.
  2. In a small bowl, whisk together olive oil, lemon juice, oregano, salt, and black pepper.
  3. Pour the dressing over the salad and toss gently to coat.
  4. Sprinkle with feta cheese before serving.

  • For best flavor, let the salad sit for 10 minutes before serving.
