Description

A fresh and healthy Mediterranean chickpea and avocado wrap packed with herbs, cucumber, and lemon for a light yet satisfying meal.


Ingredients

  • 1 cup cooked chickpeas
  • 1 ripe avocado, sliced
  • 1/2 cucumber, thinly sliced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • 1 tbsp lemon juice
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 whole wheat tortillas or wraps

Instructions

  1. Mash the chickpeas slightly with a fork in a bowl.
  2. Add lemon juice, olive oil, salt, and pepper. Mix well.
  3. Spread the chickpea mixture evenly over the tortillas.
  4. Layer avocado slices, cucumber, parsley, and mint on top.
  5. Roll the tortillas tightly, tucking in the sides as you go.
  6. Slice in half and serve immediately.
