Ingredients

- 1 cup cooked chickpeas
- 1 ripe avocado, sliced
- 1/2 cucumber, thinly sliced
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh mint, chopped
- 1 tbsp lemon juice
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 whole wheat tortillas or wraps
Instructions
- Mash the chickpeas slightly with a fork in a bowl.
- Add lemon juice, olive oil, salt, and pepper. Mix well.
- Spread the chickpea mixture evenly over the tortillas.
- Layer avocado slices, cucumber, parsley, and mint on top.
- Roll the tortillas tightly, tucking in the sides as you go.
- Slice in half and serve immediately.
