- 2 tablespoons olive oil
- 1/4 cup chicken broth
- 2 tablespoons lemon juice
- 2 tablespoons capers
- 1 tablespoon butter
- 1 tablespoon chopped fresh parsley
Instructions
- Pound chicken breasts to an even thickness.
- Mix flour, salt, and pepper in a shallow dish.
- Coat chicken in the flour mixture.
- Heat olive oil in a pan over medium-high heat.
- Cook chicken for 4-5 minutes per side until golden brown and cooked through.
- Remove chicken and set aside.
- Add chicken broth, lemon juice, and capers to the pan.
- Simmer for 2 minutes, then stir in butter.
- Return chicken to the pan and coat with the sauce.
- Sprinkle with parsley before serving.
