- 4 salmon fillets (6 oz each)
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tsp dried oregano
- 1 tsp garlic powder
- 1 cup fresh or frozen cranberries
- 2 tbsp honey
- 1 tbsp lemon juice
- 1/4 cup water
Instructions
- Preheat your oven to 375°F (190°C).
- Place the salmon fillets on a baking sheet lined with parchment paper.
- Drizzle with olive oil and season with salt, pepper, oregano, and garlic powder.
- Bake for 12-15 minutes or until the salmon flakes easily with a fork.
- While the salmon bakes, combine cranberries, honey, lemon juice, and water in a small saucepan.
- Cook over medium heat for 5-7 minutes, stirring occasionally, until the cranberries burst and the sauce thickens.
- Remove the salmon from the oven and top with the cranberry sauce.
- Serve immediately.
Notes
- Use fresh cranberries for the best flavor, but frozen works in a pinch.
- Adjust honey to taste if you prefer a sweeter or less sweet sauce.
- For extra flavor, sprinkle fresh parsley or dill before serving.
