Ingredients

  • 1/2 cup breadcrumbs
  • 1 egg
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 onion, diced
  • 2 carrots, sliced
  • 2 potatoes, cubed
  • 4 cups beef broth
  • 1 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 bay leaf

Instructions

  1. Mix ground beef, breadcrumbs, egg, salt, and pepper in a bowl.
  2. Shape the mixture into small meatballs.
  3. In a large pot, brown the meatballs over medium heat and set aside.
  4. In the same pot, sauté onions until translucent.
  5. Add carrots and potatoes, cooking for 5 minutes.
  6. Stir in tomato paste, thyme, and bay leaf.
  7. Pour in beef broth and bring to a boil.
  8. Return meatballs to the pot and simmer for 20 minutes.
  9. Remove bay leaf before serving.

Notes

  • Use lean ground beef for less fat.
  • Add more vegetables like celery or peas if desired.
  • Store leftovers in the fridge for up to 3 days.
