Easy meal prep for breakfast to save time during the week.
Ingredients

- 6 eggs
- 1 cup of spinach
- 1 bell pepper, diced
- 1/2 cup of cheese
- 1/4 cup of milk
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, whisk together the eggs, milk, salt, and pepper.
- Stir in the spinach, bell pepper, and cheese.
- Grease a muffin tin.
- Pour the egg mixture into the muffin tin, filling each cup about 2/3 full.
- Bake for 20-25 minutes until the eggs are set.
- Let cool, then store in the refrigerator.
Notes
- These can be stored for up to 5 days.
- Reheat in the microwave for 30-60 seconds.
- Feel free to add other vegetables or meats.
