Easy meal prep for breakfast to save time during the week.


Ingredients

  • 6 eggs
  • 1 cup of spinach
  • 1 bell pepper, diced
  • 1/2 cup of cheese
  • 1/4 cup of milk
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, whisk together the eggs, milk, salt, and pepper.
  3. Stir in the spinach, bell pepper, and cheese.
  4. Grease a muffin tin.
  5. Pour the egg mixture into the muffin tin, filling each cup about 2/3 full.
  6. Bake for 20-25 minutes until the eggs are set.
  7. Let cool, then store in the refrigerator.
