Instructions

  1. Rinse quinoa under cold water.

  3. Reduce heat, cover, and simmer for 15 minutes.
  4. Remove from heat and let it sit for 5 minutes.
  5. Fluff quinoa with a fork.
  6. In a bowl, combine cherry tomatoes, cucumber, and bell pepper.
  7. Add quinoa to the bowl.
  8. In a small bowl, whisk olive oil, lemon juice, salt, and pepper.
  9. Pour dressing over the salad and mix well.
  10. Garnish with fresh parsley before serving.
