Description
Mashed Potato Cheese Puffs are crispy on the outside and soft on the inside. They make a great snack or side dish.
Ingredients

- 2 cups mashed potatoes
- 1 cup shredded cheddar cheese
- 1/4 cup grated Parmesan cheese
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 egg, beaten
- 1/2 cup breadcrumbs
- 2 tablespoons olive oil
Instructions
- Preheat oven to 375°F (190°C).
- Mix mashed potatoes, cheddar cheese, Parmesan cheese, garlic powder, salt, and pepper in a bowl.
- Shape the mixture into small balls.
- Dip each ball in beaten egg, then coat with breadcrumbs.
- Place on a baking sheet lined with parchment paper.
- Drizzle with olive oil.
- Bake for 20-25 minutes until golden brown.
- Serve warm.
Notes
- Use leftover mashed potatoes for best results.
- Add chopped herbs for extra flavor.
- Store leftovers in an airtight container for up to 2 days.
