- 8 oz penne pasta
- 2 tablespoons olive oil
- 4 boneless, skinless chicken breasts
- Salt and pepper to taste
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/2 cup grated Parmesan cheese
- 1 cup sun-dried tomatoes, chopped
- 1 cup spinach, fresh
- 1/4 cup fresh basil, chopped
Instructions
- Cook the penne pasta according to package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium-high heat. Season chicken breasts with salt, pepper, garlic powder, and Italian seasoning.
- Add chicken to the skillet and cook for 6-7 minutes on each side until golden brown and cooked through. Remove from the skillet and set aside.
- In the same skillet, add heavy cream and chicken broth, stirring to combine. Bring to a simmer.
- Stir in Parmesan cheese, sun-dried tomatoes, and spinach. Cook until spinach is wilted and sauce is thickened, about 3-4 minutes.
- Slice the cooked chicken and return it to the skillet. Add the cooked penne pasta and toss to coat everything in the sauce.
- Garnish with fresh basil before serving.
Notes
- For added flavor, marinate the chicken in Italian dressing for a few hours before cooking.
- This dish pairs well with a side salad and garlic bread.
