Ingredients

- 500g button mushrooms, cleaned and halved
- 2 tbsp olive oil
- 2 tbsp soy sauce
- 1 tbsp balsamic vinegar
- 2 cloves garlic, minced
- 1 tsp dried thyme
- 1 tsp smoked paprika
- 1/2 tsp black pepper
- Wooden or metal skewers (if wooden, soak in water for 30 minutes)
Instructions
- In a bowl, mix olive oil, soy sauce, balsamic vinegar, minced garlic, thyme, smoked paprika, and black pepper.
- Add mushrooms to the marinade and toss to coat evenly. Let sit for at least 15 minutes.
- Thread the marinated mushrooms onto skewers.
- Preheat grill or grill pan to medium-high heat.
- Grill the skewers for 8-10 minutes, turning occasionally, until mushrooms are tender and slightly charred.
- Remove from heat and serve warm.
Notes
- Use any mushroom variety you prefer.
- For extra flavor, add a squeeze of lemon juice before serving.
- These skewers pair well with rice, quinoa, or a fresh salad.
