Juicy marinated mushroom skewers grilled to perfection, perfect for a quick and healthy meal.


Ingredients

  • 500g button mushrooms, cleaned and halved
  • 2 tbsp olive oil
  • 2 tbsp soy sauce
  • 1 tbsp balsamic vinegar
  • 2 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 tsp smoked paprika
  • 1/2 tsp black pepper
  • Wooden or metal skewers (if wooden, soak in water for 30 minutes)

Instructions

  1. In a bowl, mix olive oil, soy sauce, balsamic vinegar, minced garlic, thyme, smoked paprika, and black pepper.
  2. Add mushrooms to the marinade and toss to coat evenly. Let sit for at least 15 minutes.
  3. Thread the marinated mushrooms onto skewers.
  4. Preheat grill or grill pan to medium-high heat.
  5. Grill the skewers for 8-10 minutes, turning occasionally, until mushrooms are tender and slightly charred.
  6. Remove from heat and serve warm.
