A simple and flavorful sheet pan dinner featuring maple dijon glazed salmon with roasted sweet potatoes.
Ingredients

- 4 salmon fillets (6 oz each)
- 2 medium sweet potatoes, cubed
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1/4 cup maple syrup
- 2 tbsp Dijon mustard
- 1 tbsp soy sauce
- 1 clove garlic, minced
- 1/2 tsp dried thyme
Instructions
- Preheat oven to 400°F (200°C).
- Toss sweet potatoes with olive oil, salt, and pepper. Spread on a sheet pan.
- Roast sweet potatoes for 15 minutes.
- Mix maple syrup, Dijon mustard, soy sauce, garlic, and thyme in a bowl.
- Place salmon fillets on the sheet pan with sweet potatoes.
- Brush salmon with the maple dijon glaze.
- Return to oven and bake for 12-15 minutes, until salmon is cooked through.
- Serve immediately.
Notes
- Use fresh salmon for best results.
- Adjust cooking time based on salmon thickness.
- Substitute honey for maple syrup if needed.
