Ingredients

  • 4 salmon fillets (6 oz each)
  • 2 medium sweet potatoes, cubed
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 cup maple syrup
  • 2 tbsp Dijon mustard
  • 1 tbsp soy sauce
  • 1 clove garlic, minced
  • 1/2 tsp dried thyme

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss sweet potatoes with olive oil, salt, and pepper. Spread on a sheet pan.
  3. Roast sweet potatoes for 15 minutes.
  4. Mix maple syrup, Dijon mustard, soy sauce, garlic, and thyme in a bowl.
  5. Place salmon fillets on the sheet pan with sweet potatoes.
  6. Brush salmon with the maple dijon glaze.
  7. Return to oven and bake for 12-15 minutes, until salmon is cooked through.
