Description

These refreshing mango popsicles are the perfect summer treat. Made with fresh mangoes and a hint of lime, they’re easy to make and a hit with kids and adults alike!


Ingredients

  • 2 ripe mangoes, peeled and diced
  • 1/2 cup coconut milk (or yogurt)
  • 1 tablespoon honey or maple syrup (adjust to taste)
  • 1 tablespoon lime juice
  • 1/4 cup water

Instructions

  1. In a blender, combine the diced mangoes, coconut milk, honey or maple syrup, lime juice, and water.
  2. Blend until smooth and creamy.
  3. Taste and adjust sweetness if necessary.
  4. Pour the mixture into popsicle molds, leaving a little space at the top for expansion.
  5. Insert sticks and freeze for at least 4-6 hours or until solid.
  6. To release the popsicles, run warm water over the outside of the molds for a few seconds before pulling them out.

Notes

  • You can substitute the coconut milk with any milk of your choice.
  • Feel free to add other fruits like pineapple or berries for variation.
  • For a creamier texture, you can add yogurt to the mixture.
