- 2 cups elbow macaroni
- 1 cup mayonnaise
- 2 tablespoons yellow mustard
- 1 tablespoon apple cider vinegar
- 1 cup celery
- 1/2 cup red onion
- 1/4 cup sweet pickle relish
- 2 hard-boiled eggs
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Cook the elbow macaroni according to package instructions until al dente. Drain and rinse under cold water to cool.
- In a large bowl, combine the mayonnaise, yellow mustard, apple cider vinegar, salt, and black pepper. Mix until smooth.
- Add the cooled macaroni, diced celery, chopped red onion, sweet pickle relish, and chopped hard-boiled eggs to the bowl. Stir gently until all ingredients are well combined.
- Taste and adjust seasoning if necessary. Cover and refrigerate for at least 1 hour before serving to allow flavors to meld.
