Ingredients

  • 8 ounces elbow macaroni
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 2 cups milk
  • 2 cups shredded sharp cheddar cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon paprika (optional)
  • 1/2 cup breadcrumbs (optional)

Instructions

  1. Cook the macaroni according to package instructions. Drain and set aside.
  2. In a large saucepan, melt the butter over medium heat. Stir in the flour and cook for 1 minute, stirring constantly.
  3. Gradually whisk in the milk, and continue to cook until the mixture thickens and bubbles, about 5 minutes.
  4. Remove from heat and stir in the cheddar cheese, salt, pepper, and paprika until smooth.
  5. Combine the cooked macaroni with the cheese sauce and stir until fully coated.
  6. If desired, transfer to a baking dish, sprinkle with breadcrumbs, and bake at 350°F (175°C) for 20 minutes until golden brown.
