- 1 1/2 cups crushed pistachios
- 1/4 cup melted butter
- 2 tbsp sugar
- 16 oz cream cheese, softened
- 1/2 cup sugar
- 2 eggs
- 1/4 cup lemon juice
- 1/4 cup lime juice
- 1 tsp vanilla extract
- 1 cup cherry pie filling
Instructions
- Preheat oven to 350°F (175°C).
- Mix crushed pistachios, melted butter, and 2 tbsp sugar. Press into a springform pan for the crust.
- Bake crust for 10 minutes, then let cool.
- Beat cream cheese and 1/2 cup sugar until smooth.
- Add eggs, lemon juice, lime juice, and vanilla. Mix well.
- Pour filling over the crust and smooth the top.
- Bake for 40-45 minutes until set.
- Cool, then refrigerate for at least 4 hours.
- Top with cherry pie filling before serving.
Notes
- For a firmer crust, chill it before adding the filling.
- Use fresh lemon and lime juice for the best flavor.
- Let cheesecake cool completely before adding cherries.
