Description

A creamy and tangy cheesecake with a nutty pistachio crust, topped with cherries and a zesty lemon-lime flavor.


Ingredients

  • 1 1/2 cups crushed pistachios
  • 1/4 cup melted butter
  • 2 tbsp sugar
  • 16 oz cream cheese, softened
  • 1/2 cup sugar
  • 2 eggs
  • 1/4 cup lemon juice
  • 1/4 cup lime juice
  • 1 tsp vanilla extract
  • 1 cup cherry pie filling

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Mix crushed pistachios, melted butter, and 2 tbsp sugar. Press into a springform pan for the crust.
  3. Bake crust for 10 minutes, then let cool.
  4. Beat cream cheese and 1/2 cup sugar until smooth.
  5. Add eggs, lemon juice, lime juice, and vanilla. Mix well.
  6. Pour filling over the crust and smooth the top.
  7. Bake for 40-45 minutes until set.
  8. Cool, then refrigerate for at least 4 hours.
  9. Top with cherry pie filling before serving.

Notes

  • For a firmer crust, chill it before adding the filling.
  • Use fresh lemon and lime juice for the best flavor.
  • Let cheesecake cool completely before adding cherries.
